Beauty Bites (Gluten, Dairy, Egg Free)

I call these little morsels of joy “Beauty Bites”, but they could also be called breakfast cookies, all day healthy cookies, your afternoon pick me up snack cookies, or even protein cookies. Whew! They are incredibly delicious. And, seriously, you can eat them as soon as you wake up for breakfast, or any time of the day, even throughout your day.

A cookie for breakfast? What’s not to love about that?

Okay, a little moderation might be necessary, and you’ll see why as soon as you taste them.

Each ingredient in these “Beauty Bites” on their own right, is incredibly healthy for our beauty. The beauty part of the bites was inspired because I add unsweetened collagen protein to them. Collagen protein is great for joint care, hair, and nails. Starting from our body on the inside, these little bite sized cookies will help us maintain our beauty on the outside. It’s a win-win.

If you use homemade applesauce, like my recipe here, they will even be that much healthier and that much yummier, I promise.

It’s an easy recipe that can be made in one bowl, gluten free, dairy free, or even egg free.

The hardest part is going to be NOT eating them all up, in one sitting. I think they would be perfect for your kids as a school snack or as an afternoon school snack too.

Beauty Bites Recipe
One Bowl, Gluten Free, Dairy Free, or even Egg Free

Ingredients

  • 1 cup old fashioned oats, gluten free
  • ½ cup oat flour, gluten free
  • 1 ½ tablespoons unsweetened collagen powder
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsweetened applesauce
  • ½ cup fresh blueberries
  • ⅓ cup chopped walnuts
  • ¼ cup pumpkin seeds
  • ¼ cup shredded coconut, unsweetened
  • ¼ cup maple syrup
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla
  • 1 egg or flax seed egg

Instructions

  1. Preheat oven to 350 degrees.
  2. Prepare your baking pan with a little oil, parchment paper, or non-stick baking mat.
  3. If you prefer to not use an egg, prepare your flax seed egg now and set aside. See note below.
  4. Place all of your ingredients into a mixing bowl and mix thoroughly.
  5. Form into small balls (about 1 tablespoon) and place on baking pan. I use a stainless 1 tablespoon coffee scoop for this).
  6. Bake for about 13-14 minutes.

Recipe Notes

  • If you don’t have oat flour, just grind ½ cup of oats to make your own. You can even substitute with gluten free oat bran. 
  • For flax seed egg: Add one tablespoon of ground flax seeds to three tablespoons of water. Let sit for a few minutes so it can gel.
  • You can use homemade applesauce like I did here or unsweetened applesauce from a jar. If using from a jar, I suggest using an organic one with no added sugars or preservatives.
  • Use organic ingredients when possible.
  • You can use organic, no sugar or oil added, dried blueberries if you don’t have fresh ones on hand. You could also substitute with another dried fruit, like medjool dates, raisins, or cranberries.
